Torta de Santiago

Are you looking for a sweet, easy-to-make treat? This cake originates from Galicia, Spain. It is probably the most famous dessert in the area. I was lucky enough to try it when I traveled there in 2018 and promised myself I would learn to make it when I returned home. Enjoy!

INGREDIENTS

1 cup almond flour

1/2 cup cake flour

1/2 cup sugar

1 teaspoon baking powder

1/2 cup melted butter

2 tablespoons of rum

DIRECTIONS

1. In a bowl, whisk almond flour, cake flour, baking powder, and salt.

2. Separately beat eggs with sugar very well.

3. Add butter, rum, and vanilla extract and continue mixing everything together, including the dry ingredients mixed before.

4. Pour the mixture into a greased 9-inch springform. Bake it in a preheated 350 degrees oven for 30 minutes.

5. Sprinkle with powdered sugar to decorate when the cake is cold. Have fun making it and enjoy!
